Sweet Pea Pesto Recipe

We will be serving this dish at our Napa Landing wine tasting August 6. Come by early because it is sure not to last long.

This is a delicious variation of the average pesto. It’s great for summer because it has a light clean taste that goes great with a chilled crisp white wine. You can toss this pesto with pasta or roasted potatoes or you can use it to garnish salmon or shrimp.

Ingredients:
1 (10 ounce package) frozen sweet peas, thawed
3 large garlic cloves
1/2 cup pine nuts
1 teaspoon salt
1/2 cup grated Parmesan cheese
¼ cup olive oil
2 tablespoons minced fresh rosemary

Cook peas according to package directions. Rinse with water to cool. Add peas, garlic, pine nuts, salt, and cheese to bowl of food processor. Process until finely chopped. With motor running, add 1/4 cup olive oil and process until smooth. Stir in rosemary and set aside until needed.
